Travel to Corrèze: Where it all begins
To understand how we manage to create an alcohol-free version that is close to a popular classic (gin), we take you to Corrèze, to the heart of our distillery. This is where the magic happens. The ingredients are the same, including the juniper berries that are usually used to make gin, verbena, water, but the key lies in the generosity of the spices we use. Valérie, our founder, explains: "We use 2 to 5x more than for a classic gin, because we have to extract the flavors without the help of alcohol. Distillation: The Art of Patience
This crucial detail is the duration of the distillation, which must be longer for the flavors to be there: “ We really want to capture the sensation of spice and the complexity that we find in some alcohols, but without the 'drunkenness. »
