SUGAR syrup

To welcome summer as it should be, discover three simple and fresh non-alcoholic cocktails made with lemon.
40 ml of JNPR No. 2
25 ml fresh lemon juice
15 ml of sugar syrup (add to taste)
7 basil leaves
Squeeze the lemon and strain the juice. In a shaker filled with ice cubes, add the basil leaves, JNPR No. 2, lemon juice, and sugar syrup. Mix vigorously using the shaker. Remove the ice from the shaker. Pour the mixture through a strainer into an Old Fashioned glass (short drink) with a large ice cube, or a coupe glass. Garnish with a basil leaf.
50 ml of JNPR No. 1
30 ml of fresh lemon juice
15 ml of sugar syrup (add to taste)
10 ml egg white (or aquafaba)
Squeeze a fresh lemon and strain. In a shaker filled with ice, combine JNPR No. 1, sugar syrup, lemon juice, and egg white. Shake vigorously using the shaker. Remove the ice and shake again. Serve in a coupe.
50 ml of JNPR No. 1
30 ml lime juice
10 ml of orange syrup
Squeeze a fresh lime and strain the juice. Rim a coupette glass with salt: see how to rim a glass* below. In a shaker, combine the orange syrup, JNPR No. 1, lime juice, and ice. Stir vigorously. Pour into the coupette glass, straining to remove the ice. *To rim a glass: spread salt on a plate. Moisten the rim of the glass by rubbing a lemon wedge around it. Turn it upside down and dip the wet rim into the plate, tilting it slightly and rotating it to create an even coating. Turn the glass upside down and tap lightly to remove excess salt.
