dew X JNPR
At JNPR, we love meaningful collaborations. Those that tell a story and explore our world with high standards.
We therefore gave carte blanche to the culinary studio @delarosée to imagine a creation around JNPR n°1.
The result: a pairing between a cocktail and a pastry, conceived as a true dialogue between the glass and the plate.
Delarosée signs a delicate cheesecake, punctuated with a translucent jelly made with JNPR n°1.
On the glass side, a long, fresh and aromatic “This is not a Gin & Tonic”, served over hibiscus-infused ice cubes.

• 1 tablespoon of icing sugar
• Vanilla (optional)
Biscuit base
• 200g speculoos biscuits • 80g melted butter
The base
Blend the biscuits until you obtain a fine powder.
Mix with the melted butter, then press firmly into the bottom of a pastry frame or springform pan.
Place in a cool place.
Cheesecake cream
Whisk the cream cheese with the icing sugar (and vanilla if used).
Whip the cream into stiff peaks, then gently fold it into the mixture.
Pour onto the biscuit base, smooth, then place in the refrigerator for a minimum of 4 hours, ideally overnight, for perfect consistency when cutting.
