Ingredients (for 1 glass)
- 50 ml JNPR n°1
- 200 g frozen raspberries
- 120 g white sugar
- 150 ml coconut water
- 20 ml lemon juice
- 20 ml raspberry and coconut water syrup
- 5 ml rose water
- 20 ml egg white (or aquafaba)

In a shaker, pour the egg white only and shake vigorously without ice (dry shake) to create a first emulsion. Then add JNPR n°1, lemon juice, raspberry and coconut water syrup, and rose water. Add ice cubes, shake vigorously again, then strain into a chilled coupe glass. Gently place a frozen raspberry on the foam to garnish.
For the raspberry coconut water syrup:
Place frozen raspberries, sugar, and coconut water in a saucepan. Heat until it gently boils, lightly crushing the raspberries. Turn off the heat and let steep for 30 minutes. Strain through a fine sieve, then let cool. Bottle and store in the refrigerator.

- 5 ml of sugar syrup
- 1 drop of 10% saline solution
- 80 ml of sparkling water
